Yesterday, Husband called me up and said he was really in the mood for pulled pork. I had just seen this recipe from Chew Out Loud the night before, so we said, what the heck, Chicken Tikka will wait until next week. Of course, the fact that he said he would go to the store and get the pork started in the slow cooker this morning certainly helped persuade me.
This was all sorts of tasty! My husband raved again and I thought it was great. We have leftovers to eat tomorrow for dinner <two-fer bonus!>
I paired it with some sugar snap peas and used my trick to shred it using a hand-held mixer for an easy dinner. The Boog ate her bread… and her sugar snap peas. I wasn’t going to bother her too much to try the meat because she asked for (and ate!) seconds of her veggies. I’m pretty sure she would like it, so maybe tomorrow will be a different story.
Next time, I’d love to try this recipe out with some chicken breasts or a leaner cut of pork, just to cut down on the stats a bit. But all-in-all this had a great flavor and will probably be our approach to pulled pork/chicken in the future.
