I mentioned making this to Boog earlier in the week, so every day she would ask to make “Ga-NOL-a”.
It was pretty simple to make, and great for Boog to help me with.
My biggest problem was trying to stop her from eating the carrot mixture while I was working to get the rest of it out of the food processor. She kept dipping her finger in it and announcing, “I eat it!” She was supposed to be stirring it, but at one point I look up and she has a spoonful of the carrot mixture already halfway in her mouth.
When it was first done, I tried it and thought, whoa, that’s a big carrot flavor. But as it cooled it mellowed out and was really tasty and just worked. It made me think of autumn, which was great because I had purchased the first cinnamon broom of the season that same day. Mmmm. It was also really good as a snack, or with milk over it. I did share with Boog and Husband got to try it, but I kept most of it for myself… oops. They both liked it too and Boog’s already asked to make it again. I love when I can sneak in veggies.
My advice if you plan to make it:
1. If this is a project with a little one, plan to make some extra of the wet ingredients/carrot mixture, or put up some defenses 🙂
2. Make a double-batch! I wished I had more!
