Easy dinner tonight. Turkey burgers and roasted vegetables. I prepped the burger patties last night and got the vegetables ready to roast. It was kind of a hodge-podge of veggies left in the refrigerator – onion, zucchini, yellow squash, and then parsnips and, my favorite, brussel sprouts.
Today, I got home from work, put the veggies in the oven to roast on Timed Bake and went to get groceries. Dinner done! But, it was a good night for Boog to miss, as I don’t think she would have been a fan. She’s the only kid I know that doesn’t like a hamburger!
